one problem of many, but to start I am looking to fix a problem where upon trying to change the Insync directory, the UI flashes then freezes. Insync then has to be rebooted, and the cycle continues.
No items are synced, it’s a clean assign of the directory.
Any ideas?

Can you share what your OS and Insync versions are? Could you also try to do a clean install by following these instructions? Let me know how it goes.
I have a similar issue in Ubuntu 18.04, gnome-flashback-metacity, Insync v3.1.7.40811.
After selecting the new location for the Insync folder, the applications crashes just after the apply window appears.

Issue solved thanks to @mia help.
I had a wrong ubuntu version in the /etc/apt/sources.list.d/insync.list file.
The correct line is:
deb http://apt.insync.io/ubuntu bionic non-free contrib
